Join Dwinell Country Ales owner/brewer Justin Leigh at Mayfly Bottle Shop & Taproom as they dive into the world of "Mixed-Method" ferments. By blending beer, wine, cider, and mead, we are aiming to allow for a dialogue to develop between different fermentations.
This event will feature the release the latest iteration of Farmstand, a spontaneous wheat ale aged in oak barrels on Red Crimson rhubarb that was then blended with a wild-fermented cider (the Forrest which we will also have on draft) which finished its primary fermentation in a freshly dumped Merlot wine barrel.
Next, we will feature the release of Honey Nest, a Bière de Miel (Honey Saison) composed by blending a stainless fermented mixed-culture wheat saison with a barrel-fermented mead made with local honey.
In addition to the 2 new releases, we will also be featuring Echo Chamber, a "Rosé Wild Ale," which was composed by blending the following: a spontaneous wheat ale aged in oak on Athena Cantaloupe; a spontaneous wheat ale refermented in oak barrels with a field blend of red wine grapes; a small batch saison refermented on Kenton foraged persimmon; and a young, stainless fermented saison. We will also have several bottles of the 2021 vintage of Fool's Gold, a spontaneous wheat ale that we blended with a mead that fermented in oak barrels with Muscat de Canelli and Viognier wine grapes. This was a bottle club only release.
